Thé noir vs Thé vert
Beaucoup de monde pense que le thé noir est "cuit" tandis que le thé vert ne l'est pas. En réalité, c'est au contraire. Dans la plante de thé il y a une enzyme qui fait que la feuille devienne rouge ou noire après avoir été recoltée. Par conséquent, pour garder la couleur verte de la feuille, il est nécessaire de la chauffer et de détruire cette enzyme.
Les thés verts sont traditionnellement chauffés sur un wok chaud, tandis qu'au Japon, ils sont généralement cuits à la vapeur. À Taiwan, où les thés Oolong sont privilégiées, on permet au processus d'oxydation de commencer avant la cuisson (ou le chauffage), créant ainsi un thé qui est plus ou moins à mi-chemin entre le vert et noir.
